The reason why (the child had to be a Nazarite) is because he will deliver Israel out of the oppression of the Philistines. She told her husband the news but he wanted to hear this for himself.

He wanted the angel to clearly teach him and his wife what they needed to do with the child. God listened to him. The angel returned again and spoke to both of them, reiterating what was told to his wife prior.

Manoah asked the angel to stay a bit so they could make a meal for him. The angel refused to eat but said they could offer their burnt offering to the LORD. When Manoah asked the angel for his name, the party was over.
